Pumpkin Spice Protein Baked Oatmeal

Start your day with this delicious Pumpkin Spice Protein Baked Oatmeal. Full of pumpkin flavors and ingredients your body will thank you for! This baked oatmeal includes Wavelength Vanilla Protein, as well as oats and flax seeds to provide the antioxidants your body needs and to help boost your energy for the day!

Pumpkin Spice Baked Oatmeal

INGREDIENTS:

-2 ripe bananas

-1/3 cup maple syrup or other sweetener

-1 1/2 cup unsweetened vanilla almond milk or other preferred milk

-1 can Pumpkin Puree

-2 Scoops Wavelength Vanilla Protein Powder

-2 1/2 cups rolled oats (gluten free or regular)

-1 tsp. Vanilla extract

-1/4 cup coconut sugar or other sugar of choice (allulose, monkfruit, etc.)

-2 tbsp. ground flax

-1/2 tsp. ground cinnamon powder

-1 1/2 tsp. pumpkin pie spice

-2 tsp. baking powder

-1/4 tsp. pink Himalayan salt

-Optional- 1/4 cup chocolate chips

-Optional- additional cinnamon/sugar mixture for topping

DIRECTIONS:

  1. Preheat oven to 350.

  2. Mash banana in a baking dish.

  3. Mix in the remaining ingredients in the baking dish.

  4. Bake for 30-35 minutes or until cooked through and not mushy.

  5. Optional- Top with chocolate chips.

  6. Sprinkle additional cinnamon/sugar on top of desired.

  7. ENJOY!
