Ultimate Protein Chocolate Chip Muffins

Bakery-style Chocolate Chip Muffins…

but with Protein! These muffins are delicious and taste like they came from a bakery, but they are healthy and include protein!

Ultimate Protein Chocolate Chip Muffins

INGREDIENTS:

-1 ½ cups whole wheat spelt flour

-1 teaspoon baking soda

-¼ teaspoon Himalayan salt

-3 very ripe bananas (about 1 â…“ cup mashed banana)

-¼ cup agave (or other sweetener of choice)

-1 tablespoon vanilla extract

-Dash of ground cinnamon

-1 tablespoon melted refined, coconut oil (neutral taste)

-1 egg

-½ cup plain greek yogurt

-1 tablespoon unsweetened almond milk (or milk of choice)

-½ cup chocolate chips

-1 Scoop Wavelength Vanilla Protein Powder

DIRECTIONS:

  1. Preheat oven to 350 degrees F. Spray muffin pan with nonstick cooking spray. In a medium bowl, whisk together flour, protein powder, baking soda and salt.

  2. Add bananas, agave, vanilla, coconut oil, egg, milk and yogurt to a separate bowl. Mix well.

  3. Add wet ingredients to dry ingredients and mix until just combined. Gently fold in chocolate chips.

  4. Fill muffin pan very full, sprinkle each muffin with a few more chocolate chips and bake for 25 minutes or until toothpick comes out clean or with just a few crumbs attached. 

  5. Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Makes 6 oversized muffins.
