“Chocolate Chip” Cookie Dough Protein Balls
Healthy eating doesn’t have to be complicated! The simpler the better for forming and sustaining good, healthy habits. Ready to take action?
INGREDIENTS:
-2.5 cups organic fine, blanched almond flour
-1/2 cup Wavelength Vanilla Protein Powder or Wavelength Chocolate Protein Powder
-1/2 cup organic, unrefined coconut oil, melted
-1/2 cup organic maple syrup or other sweetener (such as agave, monkfruit syrup, coconut nectar, honey)
-2 heaping tbsp. cashew butter or other nut butter
-pinch of Himalayan pink salt
-dash of organic ceylon cinnamon
optional: add 1/4 to 1/2 cup organic cacao nibs or chocolate chips
DIRECTIONS:
Mix together melted coconut oil and sweetener.
Mix in cashew butter until well mixed.
Mix in almond flour/protein powder until well combined.
Add pinch of salt and dash of cinnamon.
Stir in cacao nibs.
Roll into balls and place on parchment paper or press into a bar mold.
Sprinkle more salt on top if desired.
Freeze until hard, about 2-3 hours.
ENJOY!
Makes 8 bars or approximately 24 balls.
