Chocolate Protein Ice Cream

Chocolate Protein Ice Cream

INGREDIENTS:

-1 13.5-ounce can organic full-fat unsweetened coconut milk or cream (refrigerated overnight)

-1/4 cup Wavelength Chocolate Protein Powder

-1/4 cup organic cacao powder

-1/2 cup organic, raw unsalted cashews, soaked in advance, drained and rinsed

-3/4 cup organic pure maple syrup

-1/4 cup melted coconut oil

-1.5 tbsp pure vanilla extract

-1/4 tsp Himalayan pink sea salt

optional: 1 cup organic cacao nibs

DIRECTIONS:

  1. To a blender, add the white solid portion only of the coconut cream, and the rest of the ingredients. Do not mix in the optional ingredient.

  2. Blend until smooth.

  3. Pour into a freezer-safe container.

  4. Optional, stir in cacao nibs.

  5. Cover and freeze until solid, at least 3 hours.

  6. ENJOY!

Makes approximately 16 oz. of ice cream.
