Chocolate Protein Cookie Pillows

Not too good to be true!

These soft, tasty chocolate cookies are fluffy pillows that simply melt in your mouth! And, they are full of protein, superfoods and adaptogens! Seems too good to be true, but it’s not!

Chocolate Protein Cookie Pillows

INGREDIENTS:

-1 serving Wavelength Chocolate Protein Powder or 2 servings Wavelength Little Ripples Chocolate Protein Powder

-1 cup blanched almond flour

-4 tbsp. coconut oil, melted (if using expeller pressed, you won’t have the coconut taste)

-3/4 cup coconut sugar

-1 large egg (or chia or flax egg)

-1/2 tsp. baking powder

-1 tsp. vanilla extract

-1/2 tsp Himalayan sea salt

-1/4 tsp. cinnamon

-1/2 cup chocolate chips

DIRECTIONS:

  1. Preheat oven to 350 degrees.

  2. Combine coconut sugar and coconut oil, until mixed well.

  3. Add in the egg, vanilla, salt, cinnamon, baking powder, protein powder and almond flour. Stir until thick batter is formed.

  4. Mix in chocolate chips.

  5. Drop 1 tbsp. balls of dough onto parchment-lined baking sheet. Press to flatten slightly.

  6. Optional- sprinkle salt on top.

  7. Bake for 12 minutes until slightly browned on edges.

  8. ENJOY!

*Makes about 16 tbsp. size cookie pillows.
